Green Eggs & Ham Mini Breakfast Frittatas

Ingredients
Main ingredients
- 12 eggs
- 12 slices of deli ham
- 1 cup spinach
- 1 tomato
- 1 capsicum (I used green to suit the theme)
- ½ cup parsley, chopped
- ½ cup basil, chopped
- 1 cup cheddar cheese, grated
- 2 Tbsp milk of choice
- ½ tsp salt
- ½ tsp pepper
- Extra virgin olive oil spray
Method
- Preheat your oven to 180°C and grease a 12 cup muffin tin with the olive oil spray.
- Prepare your vegetables by finely chopping the spinach then dicing the tomato and capsicum. Place aside.
- Blend the parsley, basil and milk of choice until combined.
- Beat the eggs, then stir the herb mixture. Place aside.
- Line each cup with a slice of ham, ensuring it is evenly spread out.
- Divide the cheese between each cup.
- Layer the tomato, capsicum and spinach in each cup.
- Pour over the ‘green egg’ mixture.
- Bake for 15-20 minutes, or until egg mixture is cooked thoroughly.
- Serve 1-2 cups either by itself or with a slice of wholemeal, rye or sourdough toast.
